Kanpai! (かんぱい！！）
This is a custom I really like and wish America would adopt, as it certainly beats the pants off our lame, half-hearted toastings. Kanpai is basically like saying "cheers," but you must wait until everyone's drinks are served. Then, after much anticipation (?) everyone toasts and shouts "Kanpai!" I think I'll be urging people to begin this tradition every happy hour I attend in the States, so be aware.
